MSG is probably going ot be critical too. I'd reccomend some HVP corn to get a savory base. If you wanna do it right, I would suggest buying some butter powder, hot sauce powder (one that has garlic in the dec like it is above), and then for some dairy notes: sour cream powder, cream cheese powder, and maybe butter powder. Normally buffalo sauce is just a mixture of hot sauce and butter. You're gonna make a seasoning blend and then coat a tortilla chip. Ok so bringing this back to your home kitchen. So everything else in here is some hot sauce, onion powder, spices, sugar, garlic powder, chicken, butter, and then some natural and artificial colors and flavors. MSG, Hydrolyzed Corn Protein, Yeast extract, Disodium inosinate, and disodium guanylate are all flavor enhancers that don't contribute much on their own (expect the HVP corn. Also from experience, i've had some buffalo chicken dip seasoning mixes that utilized these dairy powders to get a pretty good flavor in that area. The sodium diacetate, milk protein concentrate and skim milk tell me they're probably using a powdered dairy ingredient like a sour cream powder. Since it's also under the <2%, it does not need to be in order.
Mostly everything else is going to be a powder as part of the seasoning applied to the chip. OK so the corn and veg oil are going to the chip and the fry oil. Corn, Vegetable Oil (sunflower, Corn, And/or Canola Oil), Maltodextrin (made From Corn), And Less Than 2% Of The Following: Salt, Sodium Diacetate, Skim Milk, Monosodium Glutamate, Cayenne Pepper Sauce (aged Cayenne Red Peppers, Vinegar, Salt, Garlic), Onion Powder, Spice, Sugar, Hydrolyzed Corn Protein, Garlic Powder, Chicken Fat, Artificial Color (red 40, Blue 1, Yellow 6, Red 40 Lake, Yellow 6 Lake, Yellow 5 Lake), Yeast Extract, Corn Syrup Solids, Butter (cream, Salt), Natural And Artificial Flavor, Citric Acid, Milk Protein Concentrate, Chicken Broth, Chicken Powder, Disodium Inosinate, And Disodium Guanylate.
